ELDERFLOWER and STRAWBERRY CORDIAL from Lesley Robb

If you have access to elderflowers and strawberries this makes a nice change to traditional Elderflower Cordial (see Maggies recipe June 2011). Its also a very pretty colour.
ELDERFLOWER and STRAWBERRY CORDIAL
25 heads of elderflower
1.350kg sugar
1.7 litres water
50g tartaric acid from Farm and Household, Inverness or MacDonalds Hardware, Dingwall or anybody who sells wine making ingredients.
2 lemons sliced
300g strawberries
Blend strawberries to a pulp.
Boil water, add sugar to dissolve, cool.
Put all ingredients in a large pan for 24 hours stir occasionally.
Strain into small bottles.
Dilute to taste.
This should keep well in a cool place but store in the fridge once opened. Or freeze and it will keep for a very long time!
