Rachel's sausage casserole

Fry off 2 onions, then brown the sausages( veggie or locally sourced organic meat) until they look nice and brown set aside. Now soften up a couple of carrots, and any other seasonal root veg you fancy. Celery adds good flavour. Once softened, add a couple of tins chopped toms, turn down to simmer and then its time to get creative with seasonings such as black pepper, rock salt, a dash of brown sugar or a spoon of ketchup, a spoon of Worcester sauce, a glass of red, a pinch of chilli flakes, a cup of veg stock. Pinch of fennel seed, drop of fenugreek if you have it. Add sausages in and simmer away until everything is nice and soft.

Serve with a side dish of polish cabbage. Get a very hot frying pan, add a splash of oil and a spoon of butter. Add finely sliced cabbage to the pan and keep stirring, you may need to add more butter or oil. Some of the cabbage will crisp up but most will go soft.Add 2 cloves crushed garlic near the end so it doesn't burn.
Also is great served with mashed potato.
