Leek and Mushroom starter

Because I was too ambitious and planted my leeks far too close together in my raised bed they are still quite thin but tall. So I have created a perfect use for them as a starter.

For 4 people
8 to 10 thin leeks cleaned and thinly sliced
8 button mushrooms wiped and sliced

Fry leeks for 5 mins in a little butter or olive oil adding crushed fresh garlic if you wish
Add the mushrooms and fry gently for a further 3 mins or so until flavours have mixed
Ideally the leeks should still be a little crunchy to provide a contrast in textures.
Serve warm on individual plates with a sprig of parsley for decoration with brown bread to hand round.
