Elderberries

Elderberries are hanging off the trees at the moment and I love the flavour.
 

I have made elderberry syrup to have with porridge over the winter
 

Stew elderberries gently then strain .
Add 1lb sugar per pint, bring to the boil and bottle.
Store in the fridge. This is also good with ice cream or yogourt

I'm also adding them to cooking apples which can then be used for any pudding recipe

eg crumbles, pies etc Once cooked I find they add a lovely crunchy texture.
I'm going to try adding them to cake recipes eg sponges or muffins or pancakes.
 

Now why did I get rid of all my demijohns?---anyone going to make elderberry wine?
My mother used to make elderberry jelly.
Anyone got any other ideas?
