Bramble and apple sponge

125g butter at room temperature
125g caster sugar
2 eggs
175g self raising flour

2 cooking apples, peeled, cored and chopped
300g brambles
2 tbsp caster sugar

Sponge
Mix butter and sugar together in a mixing bowl with a whisk or mixer.
Beat in eggs one at a time, adding a tablespoon of flour after each egg
Mix in remaining flour and set aside

Put apples and brambles in an ovenproof dish and mix in sugar along with 2 tbsp of cold water

Put sponge mixture on the top and smooth surface

Bake for 45 minutes or til golden broad and firm - if you insert a knife or skewer into the sponge it should come out clean.

Serve with creme fraiche (West Highland dairy is a good option for the Highland Food Challenge) or custard.

Delicious and a perfect pudding for attaining that contentedly stuffed Sunday feeling!
