Regular Posts: 85 | Elderberries are hanging off the trees at the moment and I love the flavour. I have made elderberry syrup to have with porridge over the winter Stew elderberries gently then strain . eg crumbles, pies etc Once cooked I find they add a lovely crunchy texture. Now why did I get rid of all my demijohns?---anyone going to make elderberry wine? | ||

Regular Posts: 63 | I tried Maggies recipe and had some on my porridge yesterday. Verdict - very nice but a bit sweet. I've just made a second batch and added about 1/3 less sugar. I'll report back on that once I've tried some. We also made some elderberry wine yesterday - just a gallon to be going on with to test it out. I'm a bit worried that the temperature in the caravan will fluctuate moe than it should for good wine making - but will report back in a few months! | ||

Regular Posts: 85 | Recently been experimenting with cakes. Fairy cakes using 100gm each of butter, sugar and SR flour.and 2 eggs. put chunks of cooking apple in the bottom of the paper case, or apple and blackberry. When they come out of the oven drizzle over elderberry syrup while still hot. Alternatively chunks of rhubarb in the bottom with slivers of chrystalised ginger and again drizzle the elder berry syrup while hot--if you wern`t at the AGM this is what you missed as well as a fascinating look round Loch na Mhoid | ||
