| If you have access to elderflowers and strawberries this makes a nice change to traditional Elderflower Cordial (see Maggie’s recipe June 2011). It’s also a very pretty colour.
ELDERFLOWER and STRAWBERRY CORDIAL
25 heads of elderflower
1.350kg sugar
1.7 litres water
50g tartaric acid – from Farm and Household, Inverness or MacDonald’s Hardware, Dingwall or anybody who sells wine making ingredients.
2 lemons – sliced
300g strawberries
Blend strawberries to a pulp.
Boil water, add sugar to dissolve, cool.
Put all ingredients in a large pan for 24 hours – stir occasionally.
Strain into small bottles.
Dilute to taste.
This should keep well in a cool place but store in the fridge once opened. Or freeze and it will keep for a very long time!
