Really enjoyed this when I had it near Glasgow and have been picking nettles ever since!

1 Onion
2 potatoes
1 colander of nettles--pick just the top couple of inches when they are still small and therefore not tough
I find a pair of scizzors and gloves help

Saute onion and potatoes, add nettles and 2 pints veg stock. Simmer till potatoes soft.
liquidise or mash and seive although I think this might be difficult!
season to taste

OK I'll give it a go. Didn't have a great response to nettle tea. It's a good party trick as it changes to a lovely pink colour if you add lemon but the family weren't keen on the taste.

Nettle Gnocci
Colander of nettle tops
2-3 large potatoes
1 egg
grated nutmeg
salt and pepper
50gm flour

Cook nettles in plenty of water for 10 mins
Cook potatoes and mash till smoooth
Drain nettles, squeeze out water and chop finely
mix mashed potatoes, chopped nettles, egg , flour and salt and pepper plus nutmeg
Pick off 1 inch balls roll into grub shaped, pinch the middle with a fork.
Boil plenty of water with salt and plunge in gnocci--they will rise to the surface when done.
Serve with sauce of your choice eg tomato or cheese and maybe chutney

Mizuna - one of those oriental salad leaves, very hardy, good for winter salads, but a bit fiddly, lettuce is a better option if it's available. My view anyway, others may differ!
