| This lovely recipe which makes great use of gluts of courgettes and toms from the garden.
Slice your courgettes and saute flat in a pan until golden brown on both sides. Slice your tomatoes and cheese and then create layers in a lasagne tray with the courgettes, then cheese then tomatoes, finishing with a layer of cheese. Bake in the oven until the cheese is bubbling and browned.
