Simple Summer Special - fresh lemonade

This delicious summer drink (it's equally delicious at all times of the year), is simplicity itself to make.
It requires
4 good-sized lemons
8 - 10 ounces of sugar
Just under 2 litres of boiling water
Peel the lemons with a potato peeler. Halve and squeeze to extract as much juice as possible. Quarter the squeezed halves and put the whole lot - peel, squeezed lemon pieces, juice, pith, pips and all - into a large bowl or saucepan with about 8 ounces of sugar. Pour on a little under 2 litres of boiling water, stir to dissolve the sugar, cover and leave for several hours or overnight.
Strain through a sieve, put the remains on the compost heap, add a little more sugar to taste if required, dissolved in a little hot water - lemons vary in sweetness, as do people's tastes. Make up to 2 litres, bottle and enjoy. It's best kept in the fridge, but will stay good outside for several days.
